Get the grill going for Father's Day: A Celebration of Dads

Father's Day is a special occasion dedicated to the fathers and father figures in our lives. This year, elevate your grilling game by creating a delicious dish featuring vibrant, sweet summer corn. Corn is a quintessential summer vegetable. It brings a burst of color to your table. Plus, it adds a delightful crunch and natural sweetness that pairs perfectly with grilled meats and sides.

Why Choose Corn?

Corn is not just a summer staple; it's versatile and easy to work with. When grilled, beautiful char marks form, enhancing both flavor and presentation. This dish will impress your family and guests. Grilled corn can be served on the cob, cut off for salads, or even blended into a relish. Each preparation brings out the unique flavors of this amazing vegetable.

Choosing the Right Ingredients

To prepare your dish, gather your ingredients. Head to your local Sam's Club for fresh produce, especially corn picked at peak ripeness. High-quality ingredients ensure your meal is tasty and memorable. Don't hesitate to explore their seasonal offerings. You may find fantastic deals on all your grilling needs.

Preparing the Grilled Corn

  1. Select Fresh Corn: Look for ears that are plump and green. Test for ripeness by peeling back the husk slightly to check the kernels.

  2. Grill the Corn: Preheat your grill to medium-high heat. You can leave the husks on for a different flavor, or you can husk and soak them beforehand for a tender bite.

  3. Seasoning the Corn: Start with just a sprinkle of salt and pepper, which enhances the corn's natural sweetness. For an extra kick, add spices or herbs.

Pairing Your Dish with Grilled Meats

Grilled corn pairs beautifully with various meats. Consider serving it alongside juicy steaks, pork chops, or marinated chicken. These pairings create a meal that feels complete and satisfying. A simple side salad can complement your main dish as well.

Serving Suggestions

When it's time to serve, consider how you present the grilled corn. You could serve it on the cob, brushed with a bit of herb butter. Alternatively, you can cut the kernels off and mix them with fresh ingredients. A corn relish works exceptionally well with grilled meats, adding brightness and flavor.

Final Thoughts

This Father's Day, take a moment to celebrate with delicious food. Grilling corn adds a touch of summer to your table. Plus, it creates lasting memories. By choosing high-quality ingredients and preparing with care, you can impress your loved ones.

  • 3 cups of Member's Mark Buttermilk Pancake Mix

  • 2 cups of Member's Mark Vitamin D Whole Milk

  • 2 Member's Mark Pasture Raised Grade A Large Brown Eggs

  • 5 teaspoons of Magnolia-Star Pure Vanilla Extract (used throughout)

  • 2 cups of Driscoll's Sweetest Batch Blueberries

  • 1 cup of Member's Mark Organic 100% Pure Maple Syrup

  • Member's Mark Original Dairy Whipped Topping

  • 1 cup of Member's Mark Honey Almond Granola

Directions

  1. Preheat the oven to 400 degrees.

  2. Place ¼ cup (½ of a stick) of butter on a 13”x 8” sheet pan. Place it in the oven to melt the butter while making the batter.

  3. In a mixing bowl, combine the pancake mix, eggs, milk, and 2 teaspoons of vanilla. Stir until combined. Note: Batter will still be lumpy, let it sit for 3-4 minutes before baking.

  4. Pour batter onto the sheet pan with the melted butter. Use a spatula to spread batter, creating an even surface. Sprinkle berries on top.

  5. Place the sheet pan into the oven and bake for 10-12 minutes or until lightly browned on top and cooked through.

  6. Let cool slightly, then cut into 12 squares.

  7. While the pancakes are baking, create your syrup. Place 1 cup of butter (2 sticks) in a saucepan over medium-high heat, stirring continuously. Continue cooking the butter once melted, until the butter begins to brown and smells fragrant. Remove from heat (butter will continue to brown)

  8. Stir 3 teaspoons of vanilla and the maple syrup into the butter, and stir until combined.

  9. To serve, place a pancake on a plate. Top with syrup and a sprinkle of granola on top.

Yield: 12 pancakes/2 cups of syrup
