Butter Crunch Chicken

  • 6 skinless, boneless chicken breasts

  • Salt and pepper

  • 1 stick of softened Challenge Butter

  • 1/3 cup of quick oats

  • 1/4 cup of flour

  • 1/2 cup of panko ( Japanese style bread crumbs)

  • ½ cup of grated parmesan cheese

  • ½ teaspoon salt

  • ½ teaspoon of onion powder

  • ½ teaspoon of garlic powder

  • 1 teaspoon of dry mustard

  • 1/8 cup of fresh parsley (optional)




  1. Preheat oven to 400 degrees.

  2. Lightly season chicken breasts with salt and pepper and place in a large baking dish.

  3. In a medium bowl, combine Challenge Butter, oats, flour, panko, salt, onion powder, garlic powder and dry mustard until mixture is crumbly. Sprinkle butter mixture over the top of chicken.

  4. Place in preheated oven and bake for 30 minutes or until chicken is cooked through. Sprinkle with fresh parsley and serve!

      Creates six servings
