Come January, most of us are ready for some healthy recipes. To help you keep those New Year’s resolutions, I have a great recipe that is full of flavor and healthy ingredients like Challenge Butter and Cream Cheese. This “one dish wonder” uses one of my favorite cooking methods to create juicy and tender chicken every time! Chicken breasts are braised with classic Italian vegetables, then topped with a creamy basil pesto sauce. To give this dish a punch of flavor and crunch, I added pan roasted pistachios covered with Italian Herbs. The best thing is this dish is so simple and delicious you will want to make it for a weeknight diner, but it is fancy enough to serve for dinner guests!
